Chef Fátima Marques, from the Orla do Rio restaurant in Marvão, will represent the town in the final of the XVIII International Medieval Tapas and Pinchos Contest, taking place in Valencia de Alcántara from October 23rd to 25th.

The event brings together seven representatives from Portuguese and Spanish towns that are part of the Network of Medieval Cities and Towns, competing for the title of medieval chef of 2026. Marques' creation, titled “Bosque de Outono” (Autumn Forest), is inspired by the landscapes of the Serra de São Mamede, highlighting flavors such as chestnuts and mushrooms.
The culinary proposal is based on a spongy cheese cake, upon which an autumn landscape is built with chestnut puree and sautéed mushrooms, complemented by pepper and aromatic herbs. "I looked for products that represented this land and this landscape. Chestnuts and mushrooms are very characteristic of this region, and I wanted to bring those flavors to the Contest," explained the chef.
Fátima Marques focuses on a cuisine that respects the flavor of each ingredient and seeks balance, avoiding unnecessary complexity. "I don't believe it's necessary to do something very difficult. I prefer something simpler, because sometimes simple is better," she summarizes.
The name "Bosque de Outono" reflects the location of the Orla do Rio restaurant in Portagem, next to the Sever River and at the foot of Marvão, in a landscape marked by the Serra de São Mamede, especially in autumn. The chef aimed to transport this atmosphere to the dish, using chestnut trees, mushrooms, and seasonal flavors as inspiration.
For Marques, the final also represents a reunion with the contest, which she knows well as Marvão has hosted the international final twice. The chef values the exchange between cooks, territories, and cultures, considering it "a project that should continue." The proximity between Marvão and Valencia de Alcántara highlights a relationship that transcends geography, sharing landscape, products, and centuries of history.
The Network of Medieval Cities and Towns, which includes locations such as Almazán, Estella-Lizarra, Hondarribia, Laguardia, Marvão, Santo Domingo de la Calzada, Sigüenza, and Valencia de Alcántara, aims to promote the historical, cultural, and gastronomic heritage of these towns. The tapas contest is one of its most established initiatives.
